Description
Iceberg is a variety of lettuce with crisp leaves that grow in a spherical head resembling cabbage. It is considered one of the sweeter lettuce varieties.

Ingredients
Iceberg
Corn
Radishes – if you are not a fan of radishes, use cucumbers instead
Salt
Pepper
Garlic
Apple cider or white wine vinegar
Greek Yogurt
Mayonnaise
Fresh chopped dill (could use frozen dill, but not dried)
Method
In a bowl, combine 4 cups of chopped iceberg, 1 cup corn kernels (canned or boiled), 1/2 cup thinly sliced radishes and a dressing made of Greek yogurt, mayonnaise, salt, black pepper, garlic, dill (optional) and vinegar. Stir to combine. Serve immediately.
While the lettuce could be chopped in advance (up t0 2 days), the salad tastes best at the time it is made. So I don’t recommend making it in advance.
Leftovers could be saved in an air tight container in the fridge, but should be consumed within a few hours.
